Our steers spend their entire lives on the ranch. They are raised and finished here in small groups, with grass and alfalfa grown on the property forming the foundation of their feed. We use no hormones and no unnecessary antibiotics. When the beef is ready, it is processed locally in a USDA-inspected facility, then vacuum packed and sealed for quality and convenience.

This is straightforward, carefully raised beef with exceptional flavor—the kind of food people remember because they know where it came from.

Quarter-Beef Orders

Order in quarter-animal increments, with a balanced selection of beef from the whole animal.

Order by the Quarter

A quarter beef is one equal share of the entire animal—not simply the front or hind quarter. That means your order includes a practical mix of steaks, roasts, ground beef, and other cuts from across the animal.

Plan on approximately 100–130 pounds of packaged beef per quarter. The final weight varies with the size of the steer, aging and trimming, and whether you choose more bone-in or boneless cuts. Allow roughly 4–5 cubic feet of freezer space.

A Typical Quarter May Include

  • Ribeye, New York strip, sirloin, and tenderloin or filet steaks
  • Chuck, arm, rump, round, and sirloin-tip roasts
  • Ground beef in convenient freezer packages
  • Stew meat and, when requested, cubed steak
  • Brisket, short ribs, soup bones, and other available specialty cuts

What to Expect

Because every animal and cutting plan is different, exact weights and the number of each cut will vary. Bone-in versus boneless choices, steak thickness, roast size, and how much meat is made into ground beef all affect the final package.
