Set along the Sevier River near Hatch, Lucky 7 Ranch has endured seasons, weather, hard work, and change for more than 150 years. Four generations of the Walter family have answered by continuing to care for it.
The ranch is not a monument to the past. It is a place where cattle are raised, hay is grown, families gather, races begin, and new memories become part of an old story.

Beef With a Place Behind It.
Our Angus steers are farm raised and finished on Lucky 7 Ranch in small groups. Grass and alfalfa grown on the property form the foundation of their feed. No hormones. No unnecessary antibiotics.
The beef is processed locally in a USDA-inspected facility, vacuum packed, sealed, and ready for your freezer.

A quarter is a balanced share of the whole animal, with a useful mix of steaks, roasts, ground beef, stew meat, and other available cuts. Plan on roughly 4–5 cubic feet of freezer space. Exact weight and cuts vary by animal and processing choices.

Church retreats, corporate gatherings, ultramarathons, and summer festivals all take on a different character at Lucky 7 Ranch.
Plans can range from about 100 to as many as 5,000 guests, depending on the event and infrastructure. Reservations begin at $5,000. Tent camping and a limited number of RV spaces are available; the ranch does not provide other overnight accommodations.

Big Russ
Ice Cream, Family & a Spoonful of Heat.
The Big Russ ice cream stand is named for Russel J. Walter—an all-star basketball player at Las Vegas High School whose height and big hands earned him the nickname, and who later served aboard a Navy destroyer in the Pacific during the Korean War.
Big Russ loved ice cream second only to his family. His signature combination was a scoop of vanilla topped with a generous spoonful of Pace Picante Hot Sauce. Yes, really.
In one of Utah’s coldest valleys, the Big Russ stand carries that story forward with ice cream sandwiches, frozen treats, and a little Walter family personality.
