Every steer spends its life at Lucky 7 Ranch. The cattle are raised and finished here in small groups, with grass and alfalfa grown on the property forming the foundation of their feed. It is a straightforward approach built on care, patience, and knowing exactly where your food comes from.

Grass and alfalfa grown on the property support the cattle through the seasons. The result is carefully raised beef with exceptional flavor and a story you can trace all the way back to the land.

Ordering by the quarter

A practical share of the whole animal.

A quarter beef is one equal share of the entire animal—not simply the front or hind quarter. Your order includes a useful balance of steaks, roasts, ground beef, and other cuts.

Final weight varies with the steer, aging and trimming, and your bone-in or boneless selections.

What typically comes in a quarter

The exact mix depends on the animal and cutting instructions, but a quarter commonly includes selections such as:

  • Tenderloin or filet
  • Chuck and arm roasts
  • Rump or sirloin-tip roasts
  • Short ribs or brisket
